Zucchini Yoghurt Dip

Time: 25 minutes
Serves: 1-2
Ingredients:
- 1 zucchini, chopped
- 1 tbsp cumin seeds
- 1 tbsp mustard seeds
- 1 tbsp garlic, crushed
- 1 tbsp ginger, crushed
- •1 redd chilli, chopped
- Greek style yoghurt
- Extra virgin olive oil
- Salt
- Roti, to serve
Method:
In hot fry pan, add olive oil fry off ginger, garlic, cumin and mustard seeds.
Fry up the chopped red chilli and until fragrant. Add the cubed zucchini then add salt to taste.
Saute the zucchini and chilli uitl ot becomes soft then allow it to completely cool.
Once cooled, stir the zucchini-chilli spiced mix through the Gree Style yoghurt.
Serve with roti.
