Time: 10 minutes plus overnight marinating

In a bowl, add turmeric, chilli powder, chilli flakes, pepper, ajwain, and cumin. Mix to combine.
Sprinkle the spice mixture evenly over the fish on both sides. Marinate overnight in the fridge. Season with salt.
In a hot pan, melt the ghee then shallow fry the fish.
Place the fish on a plate. Add 1 tsp of chopped chives and a squeeze of ½ lemon juice to the remaining ghee and pour over the fish.
Sprinkle some chives over and serve with the remaining lemon.
