Roti Noodles with Prawn and Fried Egg as seen on @goodchefbadchef featuring our Roti which is available from Woolworths, Coles, plus independent and India grocers in Australia. 🫓🍜 RECIPE BELOW ⤵ Serves 2-4 Time 15 minutes Ingredients 8 Katoomba Roti's, cooked and sliced 2 tbsp ghee 1 brown onion, thinly sliced 1 knob of ginger, cut into matchsticks ½ long red chilli, finely chopped ½ long green chilli, finely chopped 5 eggs 8 prawns Handful of bean sprouts 1 tbsp light soy sauce Handful of coriander Handful of garlic chives Handful of spring onion Salt Method Heat the roti in a large pan. Cook for 1 minute on each side or until it’s golden brown. Cut the roti into thin strips and set aside. In a hot pan melt the ghee, then add the onion and cook for 20 seconds. Add the ginger, red and green chillies and continue to cook until the onion is translucent. Move the onion to the side then add the egg. Slightly break and scramble the eggs. Add the prawns, and allow it to cook for a couple of seconds. Add the roti, soy sauce, bean sprouts, coriander, garlic chives and spring onion. Season with salt and toss to combine. I love adding condensed milk to a crispy paratha. For an extra special touch, I layer paratha then condensed milk and repeat topped with condensed milk and sprinkles!" Roti Paratha Cake Recipe ⤵ Ingredients 8-10 Katoomba Roti Bread (or more, depending on cake height preference) 1 can sweetened condensed milk (about 395g) Colourful sprinkles (for decoration) Instructions Prepare the Katoomba Roti: Remove the Katoomba Roti from the freezer. Heat a pan over medium heat. Cook each paratha on both sides for about 2 minutes, until they are golden brown and crispy. Once cooked, set the parathas aside and let them cool to room temperature. Layering the Cake: Place one crispy paratha on a serving plate. Drizzle a generous amount of condensed milk over the paratha. Place another cooked paratha on top and repeat the process: paratha → condensed milk → paratha. Continue layering until all the parathas are stacked. Final Topping: On the topmost paratha, drizzle extra condensed milk to cover the surface completely. Sprinkle colourful sprinkles over the top for decoration. Recipe Credit - Maryann Peen Serves: 2 Preparation Time: 10 minutes Cook Time: 15 minutes Ingredients 4 Katoomba Rotis 2 eggs 3 slices crispy bacon 1/2 cup cheese, grated 1/2 cup baked beans 1/2 onion, thinly sliced 1/2 capsicum, thinly sliced 1/2 tablespoon olive oil (for sautéing) Salt and pepper to taste Fresh parsley or chives for garnish (optional) Instructions Prepare the Katoomba Roti Remove the Katoomba Roti from the freezer. Roti Fried Rice 🍚🥦🥕 Try this quick and easy, veggie packed recipe the whole family will love! Recipe ⬇️💚 Serves: 2 Preparation Time: 15 minutes Cook Time: 15 minutes Ingredients 2 Katoomba Roti's (available from Woolworths, Coles and selected independent retailers in Australia) 250g cooked chilled basmati rice* (or 85g raw basmati rice, cooked according to package instructions then chilled) 1 tablespoon ghee or butter 100g green beans, cut into small pieces 1 small head of broccoli, chopped 1 small carrot, grated 1/2 teaspoon curry powder 2 eggs 1 sprig spring onion, chopped or handful coriander leaves Method Cook Katoomba roti parathas Heat a non-stick pan over medium heat. Cook the Katoomba Roti Parathas according to package instructions until golden brown. Transfer to a cutting board and chop into 1cm wide, bite-sized strips. Set aside. Cook and chill rice (if using raw rice) Rinse 85g of basmati rice under cold water until the water runs clear.In a saucepan, add the rinsed rice and 250ml of water. Bring to a boil, then reduce the heat to low and cover. Simmer for about 10-12 minutes or until the rice is cooked and the water is absorbed. Once cooked, spread the rice onto a baking sheet to cool quickly. Chill in the refrigerator until ready to use. Make the fried rice Heat a tablespoon of ghee or butter in a large skillet or wok over medium-high heat. Add the chopped green beans, broccoli, and sliced carrot. Stir-fry for about 3-4 minutes until the vegetables are slightly tender. Add the chilled cooked rice and chopped roti to the skillet and stir fry with the vegetables. Sprinkle with curry powder and mix trough. Push the fried rice to one side of the skillet. Crack two eggs into the empty space and scramble them until cooked through. Mix into the rice along with chopped spring onion or coriander leaves. Roti sausage rolls, the perfect easy weekend baking recipe! 🫓😍⬇FULL RECIPE ⬇ Our roti is available in the freezer section at Woolworths. Makes 4 Ingredients 6 Katoomba Roti's 2 small carrots 4 thin or 2 thick leftover cooked sausages, cooled 1 (400g) can chickpeas, drained 1 egg Sesame seeds, optional Sauce to serve Method Preheat oven to 200°C. Line a baking sheet with baking paper. Remove Roti's from the freezer and thaw out for 2 minutes until slightly softened. Place carrots in a food processor and pulse for 30 seconds to chop finely. Add sausages broken into chunks, chickpeas and egg. Process for a minute for the mixture to form a coarse paste. Remove plastic film from a roti round. Place on the paper-lined baking tray. Divide mixture into six equal parts and place one part over half of the pastry, forming a log. Roll up the pastry snugly around the filling. Repeat with the remaining roti's and filling. Sprinkle with sesame seeds, if using. Bake for 16-18 minutes until the pastry is golden. Sausage Roti. 🍕🫓😋 A yummy and easy recipe that was featured on Everyday Gourmet. ⬇️ RECIPE BELOW ⬇️ Recipe: Justine Schofield Cook Time: 15 minutes Servings 4 Ingredients 4 frozen Katoomba roti 4 thick pork sausage (or sausage of your choice), casings removed 2 tbsp mozzarella cheese, shredded Sicilian chilli or capsicum sauce (from deli) Parsley, to serve Method Sprinkle cheese on roti leaving a 2 cm border. Using your hands spread the sausage mince over the roti ensuring it’s evenly covering the cheese. Place the roti meat side down on a pan over a medium heat. Cook for 3 - 4 minutes. Using an egg flip, turn the roti over and cook for a further 2 - 3 minutes until golden and crisp. Ingredients 1 packet Katoomba Roti Paratha 1kg beef mince meat 4 onions onions, chopped (use food processor or chopper) 4 tablespoons tahini 3 tablespoon white vinegar 5-6 tablespoons pomegranate molasses 1 small Bunch fresh parsley, chopped 2 tablespoons fresh mint, chopped 3-4 teaspoon baharat (mixed spice) 3 tablespoons Pine nuts cooked in 1 tablesppoon of ghee Salt & ground black pepper Method 1. In a large pan cook the mince till brown and water evaporates. 2. Add onions to the meat and saute for a few minutes till the onions soften. 3. Add Baharat spices, stir to combine. Add tahini, stir to combine. Add vinegar, stir to combine. Add Pomegranate Molasses and stir to combine. Season with salt and pepper to taste. You could also add more or less of the pomegranate molasses depending on how tangy you like it. 4. Toast pine nuts in ghee till golden then add the line nuts with the ghee to the mince mixture, stir. 5. Remove from the heat and add your fresh herbs, stir. 6. Place your frozen Katoomba Rotis on a large pan lined with baking paper and top with the yummy meat mixture. 7. Bake at 200⁰C till the pastry has puffed up and golden at the bottom. Approximately 20min depending on your oven. Notes: 1. Don’t thaw the pastry 2. You can use a non stick baking tray I like to brush some ghee on the tray before adding the pastry if you don’t have baking paper. 3. These reheat really well. 4. Lamb Kofta Kathi Rolls as seen on @everydaygourmettv featuring our roti which is available from Woolworths in the freezer section. 🌯 Ingredients 2 tbsp extra virgin olive oil 500g lamb mince 1 red onion, grated 1 tsp ground cumin ⅓ tsp ground chilli 1 tsp allspice ½ cup hummus ½ cup of Greek-style yoghurt 4 Katoomba rotis Salad ½ cup of cooked wholemeal couscous 1 punnet of mixed colour cherry tomatoes, cut in half ¼ red onion, grated or finely sliced 2 sprigs each of mint and parsley, leaves picked 1 tbsp red wine vinegar Salt and pepper Method Combine the lamb, grated onion, spices and salt and pepper in a bowl. Combine by kneading with your hands for a minute to ensure the mixture becomes sticky. Divide the lamb mince into 8 portions and then shape in kofta sausages then wrap around small metal skewers (or wooden). To make this easier, wet your hands a little. Brush koftas with 1 tbsp of the oil. Heat a griddle pan or flat plate over a medium-high heat and cook kofta for 2-3 minutes on each side. For the salad, place the cooked couscous, tomato, onion, herbs, vinegar, salt and pepper and remaining oil into a bowl and toss. Brush roti with oil and toast in a pan for a minute on each side until want. To make the kathi rolls, spread hummus and yoghurt over crispy roti and top with salad and the koftas that have been removed from skewers. Roll tightly together and serve. Serves 1-2 Prep time: 5 mins Cook time: 10 mins Ingredients ¼ cup peanut butter ½ cup rice malt syrup 1 Katoomba Foods Roti Paratha 1 medium banana 1 scoop vanilla ice cream 1 tbsp salted or plain peanuts 1 tsp icing sugar, optional Method In a small saucepan set over low heat, heat peanut butter and rice malt syrup, mixing until melted and smooth, about 5 minutes. Set aside in a safe place - it will be very hot and sticky. Preheat frying pan over medium heat. Remove Roti Paratha from the freezer and peel off plastic. Place frozen roti round in the pan and cook for 2 minutes until golden and crisp, flip and cook for a further 2 minutes. Transfer to a plate when ready. Meanwhile slice banana. This is the RONUT! 🍩 Masterchef legend Pete Campbell created this treat made from our roti. 😋 Ingredients Up to 20 Katoomba Foods Roti Paratha Neutral-flavoured oil for shallow or deep frying Filling: 4 large egg yolks ½ cup white sugar ¼ cup corn starch ⅛ cup plain flour ½ tsp salt 2 cups full cream milk 1 vanilla bean 4 tbsp cold butter, cubed Chocolate glaze: 100g good quality dark chocolate 50g good quality milk chocolate ½ cup thickened cream Method Filling: 1. Halve the vanilla bean, scrape out the seeds and chop the pod into 4 pieces 2. Combine milk, vanilla seeds and pod in a saucepan over medium heat until bubbles just start to break the surface 3. Combine egg yolks and dry ingredients in a bowl and whisk thoroughly until colour turns pale 4. Remove milk from heat, add ¼ of the milk to egg mixture and whisk thoroughly to combine and temper the eggs, repeat one more time 5. Add tempered egg mixture into the milk saucepan, place over medium high heat and whisk constantly until thickened, about 3-5 minutes 6. Remove from heat and allow to cool for about 10 minutes 7. Whisk in cold butter cube by cube to emulsify into the custard 8. Pass through a fine mesh sieve to remove the vanilla pods and any lumps, cover with cling film (on the surface of the custard) and allow to cool in the fridge for at least 4 hours Chocolate glaze: 9. Heat cream to very hot, then add finely chopped chocolate and stir to combine. Allow to cool slightly Assembly: 10. Place a 3cm cookie cutter in the centre of a roti. Pipe a 2cm-thick ring of custard around the cutter and then remove cutter 11. Slice 32 cuts around the roti, from the custard to the outer edge 12. Working your way around, fold each strip over the custard toward the centre of the roti – each strip should overlap the previous by half 13. Once all the strips are folded into the centre, using the cookie cutter push down to create the donut hole (this also seals the roti and removes the thick additional dough) 14. Shallow fry, or deep fry the Ronuts in neutral oil at 180C for about 3 minutes 15. Remove from oil and allow to cool on paper towel 16. Dip the Ronut upside-down into the chocolate glaze.

These classic, super easy to make ham and cheese roti scrolls are great to make with your left over Christmas ham. 🎅🎄🍖 RECIPE BELOW ⤵️ Makes about 16 Ingredients 3 Katoomba Foods Roti Parathas (available from Woolworths in the freezer section or at good Indian grocers in Australia) 6 slices ham ½ cup grated cheese 1 egg Method Preheat oven to 200°C. Preheat oven to 200°C. Line a baking sheet with baking paper. Remove Roti Parathas from the freezer and thaw out for 2 minutes until slightly softened. Remove top plastic. For the ham and cheese filling, sprinkle a third of the cheese over each pastry round. Top with 2 slices of ham. Roll up into a tight roll then slice the roll into 1.5cm rounds (a bit like you would sushi). Transfer to the baking sheet standing cut-side up. For the tuna and corn filling, mix together the tuna, corn and egg into a paste in a bowl. Spread the mixture thinly over each pastry round. Roll up into a tight roll then slice the roll into 1.5cm rounds (a bit like you would sushi). Transfer to the baking sheet standing cut-sude up. Bake for 15-16 minutes until the pastry is golden.
