Sausage Roti. 🍕🫓😋 A yummy and easy recipe that was featured on Everyday Gourmet. ⬇️ RECIPE BELOW ⬇️ Recipe: Justine Schofield Cook Time: 15 minutes Servings 4 Ingredients 4 frozen Katoomba roti 4 thick pork sausage (or sausage of your choice), casings removed 2 tbsp mozzarella cheese, shredded Sicilian chilli or capsicum sauce (from deli) Parsley, to serve Method Sprinkle cheese on roti leaving a 2 cm border. Using your hands spread the sausage mince over the roti ensuring it’s evenly covering the cheese. Place the roti meat side down on a pan over a medium heat. Cook for 3 - 4 minutes. Using an egg flip, turn the roti over and cook for a further 2 - 3 minutes until golden and crisp. Ingredients 1 packet Katoomba Roti Paratha 1kg beef mince meat 4 onions onions, chopped (use food processor or chopper) 4 tablespoons tahini 3 tablespoon white vinegar 5-6 tablespoons pomegranate molasses 1 small Bunch fresh parsley, chopped 2 tablespoons fresh mint, chopped 3-4 teaspoon baharat (mixed spice) 3 tablespoons Pine nuts cooked in 1 tablesppoon of ghee Salt & ground black pepper Method 1. In a large pan cook the mince till brown and water evaporates. 2. Add onions to the meat and saute for a few minutes till the onions soften. 3. Add Baharat spices, stir to combine. Add tahini, stir to combine. Add vinegar, stir to combine. Add Pomegranate Molasses and stir to combine. Season with salt and pepper to taste. You could also add more or less of the pomegranate molasses depending on how tangy you like it. 4. Toast pine nuts in ghee till golden then add the line nuts with the ghee to the mince mixture, stir. 5. Remove from the heat and add your fresh herbs, stir. 6. Place your frozen Katoomba Rotis on a large pan lined with baking paper and top with the yummy meat mixture. 7. Bake at 200⁰C till the pastry has puffed up and golden at the bottom. Approximately 20min depending on your oven. Notes: 1. Don’t thaw the pastry 2. You can use a non stick baking tray I like to brush some ghee on the tray before adding the pastry if you don’t have baking paper. 3. These reheat really well. 4. Lamb Kofta Kathi Rolls as seen on @everydaygourmettv featuring our roti which is available from Woolworths in the freezer section. 🌯 Ingredients 2 tbsp extra virgin olive oil 500g lamb mince 1 red onion, grated 1 tsp ground cumin ⅓ tsp ground chilli 1 tsp allspice ½ cup hummus ½ cup of Greek-style yoghurt 4 Katoomba rotis Salad ½ cup of cooked wholemeal couscous 1 punnet of mixed colour cherry tomatoes, cut in half ¼ red onion, grated or finely sliced 2 sprigs each of mint and parsley, leaves picked 1 tbsp red wine vinegar Salt and pepper Method Combine the lamb, grated onion, spices and salt and pepper in a bowl. Combine by kneading with your hands for a minute to ensure the mixture becomes sticky. Divide the lamb mince into 8 portions and then shape in kofta sausages then wrap around small metal skewers (or wooden). To make this easier, wet your hands a little. Brush koftas with 1 tbsp of the oil. Heat a griddle pan or flat plate over a medium-high heat and cook kofta for 2-3 minutes on each side. For the salad, place the cooked couscous, tomato, onion, herbs, vinegar, salt and pepper and remaining oil into a bowl and toss. Brush roti with oil and toast in a pan for a minute on each side until want. To make the kathi rolls, spread hummus and yoghurt over crispy roti and top with salad and the koftas that have been removed from skewers. Roll tightly together and serve. Serves 1-2 Prep time: 5 mins Cook time: 10 mins Ingredients ¼ cup peanut butter ½ cup rice malt syrup 1 Katoomba Foods Roti Paratha 1 medium banana 1 scoop vanilla ice cream 1 tbsp salted or plain peanuts 1 tsp icing sugar, optional Method In a small saucepan set over low heat, heat peanut butter and rice malt syrup, mixing until melted and smooth, about 5 minutes. Set aside in a safe place - it will be very hot and sticky. Preheat frying pan over medium heat. Remove Roti Paratha from the freezer and peel off plastic. Place frozen roti round in the pan and cook for 2 minutes until golden and crisp, flip and cook for a further 2 minutes. Transfer to a plate when ready. Meanwhile slice banana. Spread cooked roti with a tablespoon of the caramel. Top with sliced banana, a scoop of ice cream. Drizzle with extra caramel and sprinkle with peanuts. This is the RONUT! 🍩 Masterchef legend Pete Campbell created this treat made from our roti. 😋 Ingredients Up to 20 Katoomba Foods Roti Paratha Neutral-flavoured oil for shallow or deep frying Filling: 4 large egg yolks ½ cup white sugar ¼ cup corn starch ⅛ cup plain flour ½ tsp salt 2 cups full cream milk 1 vanilla bean 4 tbsp cold butter, cubed Chocolate glaze: 100g good quality dark chocolate 50g good quality milk chocolate ½ cup thickened cream Method Filling: 1. Halve the vanilla bean, scrape out the seeds and chop the pod into 4 pieces 2. Combine milk, vanilla seeds and pod in a saucepan over medium heat until bubbles just start to break the surface 3. Combine egg yolks and dry ingredients in a bowl and whisk thoroughly until colour turns pale 4. Remove milk from heat, add ¼ of the milk to egg mixture and whisk thoroughly to combine and temper the eggs, repeat one more time 5. Add tempered egg mixture into the milk saucepan, place over medium high heat and whisk constantly until thickened, about 3-5 minutes 6. Remove from heat and allow to cool for about 10 minutes 7. Whisk in cold butter cube by cube to emulsify into the custard 8. Pass through a fine mesh sieve to remove the vanilla pods and any lumps, cover with cling film (on the surface of the custard) and allow to cool in the fridge for at least 4 hours Chocolate glaze: 9. Heat cream to very hot, then add finely chopped chocolate and stir to combine. Allow to cool slightly Assembly: 10. Place a 3cm cookie cutter in the centre of a roti. Pipe a 2cm-thick ring of custard around the cutter and then remove cutter 11. Slice 32 cuts around the roti, from the custard to the outer edge 12. Working your way around, fold each strip over the custard toward the centre of the roti – each strip should overlap the previous by half 13. Once all the strips are folded into the centre, using the cookie cutter push down to create the donut hole (this also seals the roti and removes the thick additional dough) 14. Shallow fry, or deep fry the Ronuts in neutral oil at 180C for about 3 minutes 15. Remove from oil and allow to cool on paper towel 16. Dip the Ronut upside-down into the chocolate glaze.

These classic, super easy to make ham and cheese roti scrolls are great to make with your left over Christmas ham. 🎅🎄🍖 RECIPE BELOW ⤵️ Makes about 16 Ingredients 3 Katoomba Foods Roti Parathas (available from Woolworths in the freezer section or at good Indian grocers in Australia) 6 slices ham ½ cup grated cheese 1 egg Method Preheat oven to 200°C. Preheat oven to 200°C. Line a baking sheet with baking paper. Remove Roti Parathas from the freezer and thaw out for 2 minutes until slightly softened. Remove top plastic. For the ham and cheese filling, sprinkle a third of the cheese over each pastry round. Top with 2 slices of ham. Roll up into a tight roll then slice the roll into 1.5cm rounds (a bit like you would sushi). Transfer to the baking sheet standing cut-side up. For the tuna and corn filling, mix together the tuna, corn and egg into a paste in a bowl. Spread the mixture thinly over each pastry round. Roll up into a tight roll then slice the roll into 1.5cm rounds (a bit like you would sushi). Transfer to the baking sheet standing cut-sude up. Bake for 15-16 minutes until the pastry is golden. Makes 4 Ingredients 6 Katoomba Rotis 2 small carrots 4 thin or 2 thick leftover cooked sausages, cooled 1 (400g) can chickpeas, drained 1 egg Sesame seeds, optional Sauce to serve Method Preheat oven to 200°C. Line a baking sheet with baking paper. Remove Rotis from the freezer and thaw out for 2 minutes until slightly softened. Place carrots in a food processor and pulse for 30 seconds to chop finely. Add sausages broken into chunks, chickpeas and egg. Process for a minute for the mixture to form a coarse paste. Remove plastic film from a roti round. Place on the paper-lined baking tray. Makes 400g Hommus 400g can chickpeas, drained and rinsed 3 tbsp lemon juice 2 tbsp tahini (sesame paste) 2 cloves garlic, peeled and crushed ¼ tsp cumin powder Salt to taste 3-4 tbsp extra virgin olive oil 2-3 tbsp water 125g cooked baby beets* 1 tsp fresh or dried chopped parsley To serve 6 Katoomba Roti Parathas Method In a food processor or blender, add the chickpeas, lemon juice, tahini, garlic, cumin powder, and salt. Pulse until a rough paste forms. While the food processor is running, slowly add the olive oil and water through the feed tube. Stop the food processor and scrape down the sides if necessary. Continue to blend until the mixture is smooth and creamy. If the hummus is too thick, add more water, 1 tablespoon at a time, until it reaches your desired consistency. Taste and adjust seasoning as needed. Transfer the hummus to a bowl. Blend beets to a smooth or semi-smooth consistency. Add to the hommus and mix well. Smooth out the top and sprinkle with fresh or dried chopped parsley. Cook rotis in the pan according to packet instructions just before serving. Step 2 Heat 1 tbs oil in a frying pan over medium-high heat. Remove wrapping and place 1 roti in the pan. Cook for 1-2 minutes each side or until golden. Place hot roti over an upturned bowl. Lamb and potato curry 😋 2 medium (about 500g) Desiree potatoes, cut into 3-4cm pieces 1 tbs olive oil 1 large red onion, thinly sliced 4 garlic cloves, crushed 1 tbs grated fresh ginger 500g lamb mince 100g (1/3 cup) Curry Paste 2 vine ripened tomatoes, coarsely chopped 150g (1 cup) frozen peas ½ cup chopped fresh coriander leaves and stems, plus extra fresh leaves, to serve Serve with Katoomba roti and natural yoghurt. Method ➡️ Step 1 Arrange potatoes on a microwave-safe plate. Cover with 2 sheets of wet paper towel. Microwave on high for 8 minutes or until just tender. ➡️ Step 2 Meanwhile, heat oil in a large frying pan over medium-high heat. Add onion, garlic and ginger. Leftovers makeovers using our @katoomba_rotis to make scrumptious burritos – we used leftover chilli con carne mix (studded with sweet potatoes) and leftover cooked @kgfoods_australia basmati rice. Leftover Bolognese or lentil mix would work super well here too. 😋 Serves 4 Prep time: 5 mins Cook time: 12 mins Ingredients 4 Katoomba Foods Roti Paratha (available from Woolworths and good Indian grocers in the freezer section). 2 cups leftover mince sauce (Bolognese, chilli con carne) or leftover plant-based alternative 2 cups leftover cooked rice (we used Katoomba Foods basmati rice) Handful coriander leaves Optional Toppings Plain yoghurt Grated cheese Mashed avocado Lime wedges Method Preheat frying pan over medium heat. Working with one Roti Paratha at a time, remove from the freezer and peel off plastic. Place roti round in the pan and cook for 2 minutes until golden and crisp, flip and cook for a further 2 minutes. Transfer to a plate when ready. Repeat with remaning rotis. Meanwhile, reheat leftovers in the microwave or on the stove. If using prepare optional toppings. Serve rotis and leftovers tableside – you can reheat rotis by placing all in a frying pan set over medium high heat in a stack and rotating them / flipping until warmed through, this should only take about a minute. Top each roti with rice, mince mixture, optional toppings, if using, and coriander leaves. A super tasty and EASY to make beetroot hummus recipe that’s perfect to dip our roti it! 🫓🤤 RECIPE ⬇️ You can get our roti from Woolworths in the freezer section. BEETROOT HOMMUS You can use store bought hommus (250g) as a shortcut here, or follow the recipe below to make your own using canned chickpeas. Makes 400g Hummus 400g can chickpeas, drained and rinsed 3 tbsp lemon juice 2 tbsp tahini (sesame paste) 2 cloves garlic, peeled and crushed ¼ tsp cumin powder Salt to taste 3-4 tbsp extra virgin olive oil 2-3 tbsp water 125g cooked baby beets* 1 tsp fresh or dried chopped parsley To serve 6 @katoomba_rotis Parathas Method In a food processor or blender, add the chickpeas, lemon juice, tahini, garlic, cumin powder, and salt. Pulse until a rough paste forms. While the food processor is running, slowly add the olive oil and water through the feed tube. Stop the food processor and scrape down the sides if necessary. Continue to blend until the mixture is smooth and creamy. If the hummus is too thick, add more water, 1 tablespoon at a time, until it reaches your desired consistency. Taste and adjust seasoning as needed. Transfer the hummus to a bowl. Blend beets to a smooth or semi-smooth consistency. Add to the hommus and mix well. Smooth out the top and sprinkle with fresh or dried chopped parsley. Cook rotis in the pan according to packet instructions just before serving. ROTI SAUSAGE ROLLS! 😍 Quick and easy sausage rolls that the whole family will love, using our yummy, flaky roti! With hidden veggies to boot! Recipe ⤵️ Ingredients 6 Katoomba Rotis 2 small carrots 4 thin or 2 thick leftover cooked sausages, cooled 1 (400g) can chickpeas, drained 1 egg Sesame seeds, optional Sauce to serve Method Preheat oven to 200°C. Line a baking sheet with baking paper. Remove Rotis from the freezer and thaw out for 2 minutes until slightly softened. Place carrots in a food processor and pulse for 30 seconds to chop finely. Add sausages broken into chunks, chickpeas and egg. Process for a minute for the mixture to form a coarse paste. Remove plastic film from a roti round. Place on the paper-lined baking tray. Divide mixture into six equal parts and place one part over half of the pastry, forming a log. Roll up the pastry snugly around the filling. Repeat with the remaining rotis and filling. Sprinkle with sesame seeds, if using. Bake for 16-18 minutes until the pastry is golden. Remove from the oven and serve immediately with your favourite sauce or cool on a wire rack and store in the fridge in an airtight container for up to 3 days. Ingredients 1 packet Katoomba Roti Paratha 1kg beef mince meat 4 onions onions, chopped (use food processor or chopper) 4 tablespoons tahini 3 tablespoon white vinegar 5-6 tablespoons pomegranate molasses 1 small Bunch fresh parsley, chopped 2 tablespoons fresh mint, chopped 3-4 teaspoon baharat (mixed spice) 3 tablespoons Pine nuts cooked in 1 tablesppoon of ghee Salt & ground black pepper Method 1. In a large pan cook the mince till brown and water evaporates. 2. Add onions to the meat and saute for a few minutes till the onions soften. 3. Add Baharat spices, stir to combine. Add tahini, stir to combine. Add vinegar, stir to combine. Add Pomegranate Molasses and stir to combine. Season with salt and pepper to taste. You could also add more or less of the pomegranate molasses depending on how tangy you like it. 4. Toast pine nuts in ghee till golden then add the line nuts with the ghee to the mince mixture, stir. 5. Remove from the heat and add your fresh herbs, stir. 6. Place your frozen Katoomba Rotis on a large pan lined with baking paper and top with the yummy meat mixture. 7. Bake at 200⁰C till the pastry has puffed up and golden at the bottom. Approximately 20min depending on your oven. Notes: 1. Don’t thaw the pastry 2. You can use a non stick baking tray I like to brush some ghee on the tray before adding the pastry if you don’t have baking paper. 3. These reheat really well. 4. Hello Autumn! 🍂 The perfect Autumn recipe is... classic French Onion Soup to dunk our roti in! RECIPE ⬇️ Our 6 piece and 15 piece family pack featured here are available from Woolworths. FRENCH ONION SOUP Serves 4 Ingredients 1 kg brown onions 2 tbsp olive oil 50g unsalted butter ¼ tsp salt ¼ tsp freshly ground black pepper 2 large dried bay leaves 1 tsp dried thyme 1L chicken chicken stock 1L beef stock 500ml water 4 Katoomba Roti Parathas 50g Gruyère or goat’s cheese, shaved or grated Method Peel and thinly slice the onions. In a large heavy-bottomed pot or Dutch oven, add oil and butter over medium heat. Add the onions, season with salt and pepper and cook, stirring for 10 minutes until they are soft and caramelized. Add bay leaves and thyme, stir and pour in the beef and chicken broths. Bring the soup to a boil, then reduce the heat, cover and let it simmer for 45 minutes. Cook rotis in the pan according to packet instructions just before serving. Peel and chop potatoes. 2. Boil in a saucepan of water for 20 minutes, until tender. Drain. 3. Roughly mash the potato. 4. Add in the ghee, chilli, chilli powder, garlic, salt and pepper. Stir until combined. 5. Add in the spinach and stir until wilted. 6. Cool to room temperature. 7. Place 4 roti on a bench. 8. Spoon the filling evenly between the roti. 9. Top with the remaining roti, and pinch edges to seal. ( If you are using pre cooked roti, use egg wash to seal the edges.) 10. Heat olive oil in a frying pan. 11. Cook one roti at a time, a few minutes each side, until golden brown. Place on a tray in a warm oven and repeat with remaining roti. 12. Cut into wedges and serve with fresh lemon, cucumber raita and chutney.

If you’re craving fried chicken, dust off your air fryer and make these wraps stat. This is a delicious, quick and easy meal the whole family will love. 🍗🌯 See the recipe below! Get our 6 piece and 15 piece family pack of roti from Woolworths in the frozen food aisle. Ingredients 400g crumbed chicken tenders* 350g bag slaw* 2-3 tbsp tartare sauce, mayonnaise or plain yoghurt 4 Katoomba Foods Roti Parathas Method Place chicken tenders in the air fryer and cook for 12 minutes at 190C. Meanwhile mix the slaw with your choice of dressing (we chopped our slaw into smaller pieces using a pair of food scissors). Set aside. Cook rotis in the pan according to packet instructions. To serve, divide slaw between rotis. Top with 2 chicken tenders and enjoy. *Note: We used a bag of kale slaw. We used Southern Fried-style fresh chicken tenders.
