Vegetarian magic on a plate

This Vegetarian Biryani Recipe is a delicious layered rice and vegetable dish, fragrant with warming spices and lots of veggies.

This yummy recipe is made using the Katoomba Foods Premium Basmati Rice which is available at Woolworths and local supermarkets Australia wide.

Vegetarian Biryani Recipe

Tip: instead of layering the dish, feel free to cook the rice for 1-2 minutes longer and stir it through the vegetable mix.

Serves 4-6

Ingredients

  • 1 cup Katoomba Basmati Rice
  • 7 cups water, divided use
  • 6 whole cardamom pods, divided use
  • 4 whole cloves, divided use
  • 1 tsp salt

For the vegetable mixture

  • 2 tbsp ghee or olive oil, plus extra
  • ½ tsp cumin seeds
  • 1 inch cinnamon stick
  • 1 bay leaf
  • 1 small sweet potato, peeled and cubed
  • 1 medium red onion, peeled and diced
  • 1 zucchini, diced
  • thumb-sized piece ginger, peeled and crushed
  • 4-5 large garlic cloves, peeled and crushed
  • 1 tsp garam masala
  • ½ cup water, divided use
  • ½ cup plain yogurt, plus extra for serving
  • 2 tsbp milk
  • pinch saffron strands
  • lime wedges, to serve

Method

Soak the rice in 3 cups water for 30 minutes.

Meanwhile, prepare the vegetable mixture. Heat ghee or olive oil in a large frying pan set over medium heat. Add cumin seeds, cinnamon stick, bay leaf, 3 cardamom pods, 2 cloves and stir.

Add sweet potatoes and cook for 5 minutes, stirring, until golden. Add onion and cook for another 2 minutes before adding zucchini, mix well. Add ginger, garlic and garam masala and cook for another minute, stirring.

Add ¼ cup of water and yoghurt and stir through. Turn off the heat. Mix together the milk and saffron strands and set aside.

Bring a large saucepan filled with 4 cups of water, 3 cardamom pods, 2 cloves and 3/4 teaspoon to the boil. Strain rice using a sieve, add to the boiling water and stir with a spoon.

Boil, uncovered for 5 minutes or until rice is almost cooked. Remove pan from heat and strain rice in a sieve.
