Halloween Halloumi or Frankfurts Recipe

You will need one Roti Paratha per type.

Makes about 10-12 per type

  • 1 Katoomba Foods Roti Paratha (see note above)
  • Mayonnaise
  • Black peppercorns
  • Tomato sauce

For halloumi
2 x 180g packets halloumi*

For frankfurts
12 small frankfurts or mini kabanas or mini chorizos

Preheat oven to 200°C. Line a baking sheet with baking paper. Remove Roti Paratha from the freezer and thaw out for 2 minutes until slightly softened. Remove top plastic and using a sharp knife slice the pastry into 3mm-thin strips.

If using halloumi, cut the cheese across into 5-6 even logs.

Wrap each sausage or halloumi log with the pastry strips, on an angle and overlapping slightly. You might need 2-3 strips per sausage or halloumi piece.

Place on the baking sheet and bake for 15-17 minutes until the pastry is golden.

Remove from oven and cool slightly on a wire rack. To make the eyes, spoon 2 small dollops of mayo onto the cooled sausages or halloumi and pop in a couple of peppercorns. Serve with some tomato sauce for dipping.

*Note: make sure the halloumi you use comes in a rectangular flat form (not the folded over slightly rounded edge form) as it is easier to cut and will keep shape.
