This is so deliciously decadent with a layer of crunchy caramel on top and a creamy custard rice in the base. The kids will love to see the sugar turn into caramel in front of their eyes like magic.

Basmati and Custard Crème Brûlée Recipe
We used ground cardamom to add flavour to the instant custard mix, but a teaspoon of vanilla extract or ¼ teaspoon cinnamon powder would also work well here.
- 1 packet quick mix (instant) custard mix powder or 2 cups thick custard
- 1 cup cooked Katoomba Basmati Rice
- ¼ tsp ground cardamom (see note above)
- 6 tbsp raw sugar
In a medium bowl prepare the quick mix custard according to packet instruction. If using thick custard from the chilled dairy aisle, simply place it in the bowl.
Add cooked rice and cardamom powder and mix well. Divide between 3 shallow ramekins or bowls. Sprinkle sugar evenly on top and heat it with a brûlée torch until dark and caramelised.
If you don’t have a brûlée torch, melt the sugar in a small saucepan and carefully pour it over the prepared dessert, swirling into a thin layer. A
llow the caramel to cool down and set for 5 minutes before digging in.
