  • 1 red apple
  • 3 Katoomba Foods Roti Parathas
  • 2 tbsp brown sugar
  • 1 teaspoon cinnamon
  • Icing sugar, to serve

Preheat oven to 200°C. Line a 6 hole muffin tray with cupcake liners. Quarter apple, core then slice quarters into 1mm-thin slices. Place in a bowl, add 2 tablespoons of water, cover and cook for 2 minutes in the microwave to soften. Set aside to cool enough to handle.

Remove Roti Paratha from the freezer and thaw out for 2 minutes until slightly softened. Remove top plastic and cut the pastry in half across. Transfer one half of the pastry onto the spare plastic sheet. Arrange 3 apple slices across the straight edge of the pastry, overlapping slightly, then 2 more in another row slightly beneath, leaving about half of the pastry uncovered. Sprinkle with a little brown sugar and cinnamon. Fold the remaining pastry over the apples and press down gently to fold. Roll up the pastry into a snail shape. Place apple side up in the cupcake liner and repeat with the rest.

Bake for 15-17 minutes until the pastry is golden. Remove from oven and serve immediately dusted with a little icing sugar or cool on a wire rack and store in the fridge in an airtight container for up to 3 days.
